Beef and Lentil Soup


2 cups lentils (soaked overnight)

1 to 1½ lb. beef stew pieces

1 carrot, shredded

1 celery stalk, diced

1 clove crushed garlic

After soaking and draining lentils, fill large pot with 4-5 cups water.  Place lentils, beef, and garlic into pot and let simmer for approximately 25 minutes.  Add carrot and celery and cook an additional 15-20 minutes.
