Turkey Meatloaf

Ingredients:

1 to 1½ lbs. ground turkey breast

¼ cup paneko bread crumbs, unseasoned

1 egg

¼ cup grated carrot

¼ cup chopped spinach or kale

2 tsp. fresh parsley

Pre-heat oven to 350-400°.  Combine all ingredients in mixing bowl, place on baking tray and shape into loaf (or use a loaf pan).  Cook for approximately 35-40 minutes or until no longer pink in center.
